To make their concentrate, Northern Natural's warms 100% organic Montmorency tart cherries in large jacketed double wall steam kettles, and press out the juice. The steam kettles allow the water to boil away, and leaving behind pure concentrated organic tart cherry juice. Just add water (recommend about 2 tablespoons for an 8 oz. glass) and an ice cube or two, and you've got a cool, refreshing sweet/sour drink packed with nutrition.
